- 1/3 cup finely chopped fresh pineapple
- 2 1/2 ounces coconut rum such as Malibu
- 1/4 cup light coconut milk
- 1 tablespoon fresh lime juice
- 1 tablespoon sugar
- 6 ice cubes
- pineapple wedge, for garnish
Combine the pineapple rum, coconut milk, lime juice, sugar, and ice cubes in a blender. Process on high speed until smooth and frothy. Pour into a tall glass, garnish with a pineapple wedge, and serve immediately.
