COBBLER - PEACH BOURBON

Makes 6 servings.
8 peaches, peeled and sliced
1/4 c. bourbon
3/4 c. granulated sugar
2 T. corn starch
1 tsp. ground cinnamon
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. kosher salt
1/2 c. cold unsalted butter, cubed
3/4 c. whipping cream
Vanilla Ice Cream
Heat the oven to 375F.
In a large bowl combine peaches, bourbon, 1/4 cup sugar, cornstarch and cinnamon and mix well to coat the peaches evenly; set aside.
Sift together flour, 1/2 cup sugar, baking powder, and salt; cut in 12 tablespoons of the butter until mixture resembles coarse meal.
Pour in cream and mix just until dough comes together; do not overwork, dough should be slightly sticky but manageable.
In a 10-inch cast iron skillet over medium-low heat, melt the remaining 1/4 cup butter.
Add peaches and cook gently about 5 minutes or until heated through.
Drop dough by tablespoonfuls over warm peaches.
Brush the top with heavy cream and sprinkle with sugar; place on a rimmed baking sheet Bake at 385F for 45 minutes or until top is browned and fruit is bubbling.
Serve with Ice Cream.
