PUDDING - BAKED - APPLE WALNUT

Makes 6 servings.

1/4 cup butter, softened
1 cup granulated sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 cups grated peeled tart apples
1/4 cup chopped walnuts
1 teaspoon vanilla extract

Preheat oven to 350F; spray a 2-quart baking dish with cooking spray.
In large bowl, beat butter, sugar and egg with an electric mixer until smooth.
Sift together flour, baking soda, salt, nutmeg and cinnamon; gradually add to butter mixture and mix well.
Stir in apples, walnuts and vanilla until well combined; spread into baking dish.
Bake at 350F for 35 minutes, or until top springs back when lightly touched.
Serve warm with custard sauce or ice cream.
