PUDDING - OLD FASHIONED BANANA

Makes 6 servings.
2 eggs
1 c. evaporated milk
2 tsp. vanilla extract
1 c. granulated sugar
1/4 c. all-purpose flour
1 c. whole milk
2 tsp. butter
4 bananas
2 T lemon juice
1 12-oz. pkg. vanilla wafers
3 egg whites
1/4 c. granulated sugar
Beat eggs with evaporated milk and vanilla; set aside.
Combine 1 cup sugar and flour and whole milk in a microwave-safe medium bowl.
Heat in microwave, stirring at 20 second intervals, for 1 minute, until slightly thickened.
Add egg mixture; continue cooking in microwave, stirring at 20 second intervals, until thickened.
Whisk in butter until melted and incorporated; pour through sieve to remove any lumps.
Cover with plastic wrap and cool to room temperature.
Slice bananas 1/4-inch thick and toss with lemon juice; drain.
Line bottom and sides of a 9 inch pie plate with a layer of vanilla wafers and banana slices.
Pour half of pudding over wafers and banana slices; add a second layer of vanilla wafers and banana slices.
Carefully spoon remaining pudding over wafers and banana slices.
Preheat oven broiler.
In a large glass or metal bowl, beat egg whites with electric mixer until foamy.
Gradually add 1/4 cup sugar, continuing to beat until whites are stiff.
Spread meringue into pie pan, making sure to completely cover pudding layer.
Place under broiler until meringue is browned. Chill before serving.
