BEEF STEAK - PEPPER CABBAGE STIR FRY

Makes 6 servings.

3 T. vegetable oil
6 cloves garlic, chopped
1 1/2 lb. Sirloin steak, sliced thinly
1 small head cabbage, shredded
1 red pepper, cut into strips
1 green pepper, cut into strips
1/4 c. soy sauce
2 T. cornstarch
3/4 cup beef broth
4 green onions, sliced thinly on the diagonal
1 T. ground black pepper
4 c. cooked rice, hot.

Heat a wok or large skillet over medium-high heat, and add oil.
Saute garlic for about 5 seconds; add beef and stir fry until beef is evenly browned.
Stir in cabbage and peppers, and stir fry 2 to 3 minutes, or until tender-crisp, and beef is fully cooked; stir in soy sauce.
Mix together cornstarch and beef broth; stir in to wok.
Season with black pepper; toss in green onions.
Cook, stirring, until sauce has thickened.
Serve with cooked rice.
