FRUIT PIE - RASPBERRY PEACH

Category: Berry & Fruit Pies

Makes 6 servings.

4 c. fresh peaches peeled, pitted and sliced
3/4 c. fresh raspberries
3/4 c. fresh blackberries
3/4 c. granulated sugar
3 T. all-purpose flour
1 tsp. ground cinnamon
pastry for a double crust pie (9 inch)
2 T. butter, softened and cut into pieces
1 T. coarse granulated sugar

Preheat oven to 400F.
Place peaches and berries in a colander for about 15 minutes to drain any excess juice.
Transfer 1/2 cup of the berries to a small bowl; mash with a fork; add sugar, flour, and cinnamon and whisk to blend.
Combine berry mixture and drained fruit in a large bowl; toss gently.
Transfer to pie crust; dot with butter and top with remaining crust.
Cut vents in top and sprinkle with coarse sugar.
Bake at 400F for 45 minutes, or until crust is golden brown.
