CREAM PIE - COCONUT DREAM

Category: Cream, Custard & Nut Pies

Makes 8 servings.

2 c. coconut milk
1 1/2 c. light cream
3 eggs
1 1/4 c. granulated sugar
6 T. cornstarch
1/4 tsp. salt
1 1/4 c. flaked coconut
1 1/2 tsp. vanilla extract
1 pastry shell (9 inch), baked
2 c. sweetened whipped cream
1/4 c. flaked coconut, toasted

Combine coconut milk, cream, eggs, sugar, flour and salt in a medium microwave-safe bowl.
Cook in microwave on HIGH, whisking to blend after every minute for 6 to 8 minutes, or until thickened.
Stir in 1 1/4 cup coconut and vanilla; spoon into pastry shell and chill 4 to 6 hours, or until firm.
Top with whipped cream, and 1/4 cup toasted coconut.

Note: To toast coconut, spread out on a baking sheet and bake at 350F for 5 to 7 minutes, or until golden brown, stirring occasionally.
