Makes 8 servings.

1/4 c. unsalted butter, softened
12 thick slices white bread
1/2 c. orange marmalade
2 c. light cream
1 c. whipping cream
6 eggs
2 T. grated orange rind
1 c. granulated sugar
2 T. Demerara sugar
1/4 c. finely chopped candied orange peel
whipping cream

Preheat oven to 350F. Spray a 9 x 13-inch baking dish with cooking spray.
Spread butter liberally on one side of all slices of bread; spread marmalade on 6 buttered slices.
Top with the other 6 buttered slices, butter -side in.
Liberally butter the tops of the marmalade sandwiches. Slice the sandwiches into quarters diagonally.
Arrange sandwiches, butter side up, overlapping one another in baking dish, cut points facing upward.
In a medium bowl, whisk light cream, 1 c. whipping cream, eggs, orange rind and sugar together; and pour over bread.
Sprinkle Demerara sugar and candied peel over top.
Bake at 350F for 30 to 35 minutes.
Pudding should be puffy, golden, and crunchy on the top.
If a more toasted top is desired, place under broiler for a few minutes at the end of the baking time.
Remove pudding and cool briefly on a rack. Serve pudding while it is still puffy and warm, accompanied by extra whipping cream.
