VEG - ULTIMATE POTATO SOUP

Makes 6 servings.

3 c. diced potatoes
2 celery stalks, diced
1 onion, chopped
4 c. chicken broth
2 c. light cream
3 T. butter, melted
3 T. all-purpose flour
2 T. chicken bouillon granules
black pepper

In a large pot, bring potatoes, celery and onion to a boil in 2 cups of broth.
Cook until potatoes are tender then drain and reserve liquid.
Combine reserved broth and cream in pot.
In a small bowl, combine melted butter and flour; whisk into cream mixture over medium heat and stir until thickened.
Stir in reserved vegetables, remaining broth, bouillon granules and pepper.
Heat through and serve.
