CHICKEN - SMOKY SWEET POTATO SOUP

Makes 6 servings.

3 T. olive oil
3 carrots, peeled
3 stalks celery
1 onion, peeled and halved
3 cloves garlic, chopped
3 chipotle chile in adobo, finely chopped, with sauce
1/2 T.. dried thyme
1 bay leaf
salt and pepper
1 1/2 c. dry white wine
8 c. chicken broth
2 sweet potatoes
6 chicken breasts fillets, cut into bite size pieces

6 scallions, white and green parts thinly sliced
6 T. cilantro leaves, roughly chopped
1 c. sour cream

Heat a soup pot over medium-high heat with olive oil.
Chop carrots in half lengthwise then slice into thin half moons; add to soup pot while it heats, stirring to coat the carrots in the oil.
Dice and add celery and onion.
Add garlic, chipotle, and adobo sauce; stir to combine.
Add thyme and bay leaf and season to taste with salt and pepper; cook for 1 minute.
Add wine and simmer another minute.
Add broth, cover the pot, and raise heat to high.
Bring to a boil, remove cover, and simmer for 10 minutes.
Peel and cut sweet potatoes into quarters lengthwise, then thinly slice into bite size pieces.
Add chicken and sweet potatoes to soup and simmer 5 minutes until sweet potatoes are tender and chicken is cooked through.
Turn heat off and add scallions and cilantro.
Serve with a dollop of sour cream on top.
