FRUIT PIE - APPLE LATTICE TOP

Makes 6 servings.

pastry for a double crust pie (9 inch)
1/2 c. butter
3 T. all-purpose flour
1/4 c. water
1/2 c. granulated sugar
1/2 c. brown sugar, packed
8 apples, peeled, cored and sliced*

Preheat oven to 425F.
Melt the butter in a saucepan. Stir in flour to form a paste.
Add water, granulated and brown sugar and bring to a boil. Reduce temperature and let simmer.
Roll out pastry and line pie pan. Fill with apples, mounded slightly. Cover with a lattice work of pastry. Gently pour the sugar and butter liquid over the crust. Pour slowly s that it does not run off.
Bake at 425F for 15 minutes. Reduce temperature to 350F.
Continue baking for 35 to 45 minutes, until apples are soft.

*Use Granny Smith for a tarter filling, or a mixture of Golden Delicious and Gala apple for a sweeter filling.
