PORK - LOIN - CREAMY LEMON SAUCE

Makes 6 servings.

1 1/2 lb. pork tenderloin, cubed
2 T. butter
3/4 c. sliced mushrooms
1 c. chicken stock
1 T. all-purpose flour
1/2 c. whipping cream
1 T. lemon juice
black pepper
lemon wedges
fresh parsley, chopped
3 c. cooked noodles

Trim meat of excess fat. Heat butter in heavy skillet.
Cook meat quickly, in small batches over medium-high heat until well browned; drain on paper towels.
Add mushrooms to pan and cook for 2 minutes. Return meat to pan with stock; bring to boil. Reduce heat to simmer, cook covered 30 minutes or until meat is tender, stirring occasionally.
Mix together flour and cream. Add to pan; increase heat and stir until the sauce thickens.
Simmer for 2 minutes; season with lemon juice and pepper.
Serve with noodles and garnish with lemon wedges and parsley.
