PORK - PEANUT SATAY

Makes 8 servings.

1 1/2 lb. pork tenderloin
1/2 c. vegetable oil
3 T. of soy sauce
3 tsp. ground cumin
1 tsp. freshly ground pepper
vegetable oil for brushing

Satay Dipping Sauce

Cut pork tenderloin in 1 x 4-inch lengths; place in a large sealable bag.
In a small bowl, whisk together 1/2 cup vegetable oil, soy sauce, cumin and pepper to combine.
Pour over pork and refrigerate to marinate for 4 hours, or overnight.
One hour prior to grilling, soak 8 bamboo skewers in water.
Remove pork from refrigerator and drain in a colander; discard marinade and pat pork dry.
Thread pork on to soaked bamboo skewers; brush with oil and season to taste with salt and pepper.
Preheat grill to 375F (medium-high).
Place a 4 x 10-inch sheet of aluminum foil in the center of grill; oil grill to prevent sticking.
Place skewers on grill with ends of the skewers over aluminum foil to prevent skewers from burning ; cook 3 to 4 minutes per side.
Remove pork, place on tray and loosely cover with aluminum foil.
Let pork rest 5 minutes; serve with Satay Dipping Sauce.
