PORK - HOI SIN SAUCE WITH PEANUTS

Makes 6 servings.

1 1/2 lb. pork loin
2 T. sherry
1 T. cornstarch
1/2 c. peanut oil
1 c. unsalted, skinless peanuts
2 c. fresh mushrooms, chunked
1 can water chestnuts, sliced
2 green onions, cut into 1-inch lengths
1 clove garlic, minced
8 T. hoi sin sauce
3 c. cooked rice or noodles

Cut porkinto 1/2-inch cubes and marinate in sherry and cornstarch.
Heat oil in small saucepan and add peanuts when oil is hot.
Stir or shake frequently, until golden brown, drain and place on paper towels.
Heat 2 tablespoons oil in skillet and add porkwhen very hot.
Cook quickly until meat is white. Add mushrooms, water chestnuts, onions and garlic.
Cook, stirring, until mushrooms are slightly wilted.
Add hoi sin sauce and peanuts. Mix well and serve on noodles or rice.
