SEAFOOD - SHRIMP - CAJUN

Makes 6 to 8 servings.
2 T. olive oil
2 cloves garlic, minced
2 lb. jumbo shrimp, peeled and deveined
1 T. Cajun seasoning
1/2 c. diced green pepper
1/2 c. diced red pepper
3 green onions, chopped
1/4 tsp. crushed thyme
3 cups cooked rice
1 14-oz. can Italian-style stewed tomatoes
salt and pepper
Heat olive oil in a Dutch oven over medium-high heat.
Add garlic and shrimp; season with Cajun seasoning and saute 3 minutes, or until almost cooked through.
Add green and red peppers, green onions and thyme; saute for 2 minutes.
Add rice and tomatoes; cook for 2 to 3 minutes to heat through. Season to taste with salt and pepper.
