PORK - LOIN - APPLE GLAZED

Category: Pork

Makes 4 to 6 servings.

1 lb. pork loin, cut thinly
salt and pepper
all-purpose flour
1/4 c. butter
2 green onions, minced
2 stalks celery, diced
1/2 c. dry white wine
1/2 c. apple jelly
3/4 c. whipping cream
1 tsp. thyme

Preheat oven to 200F.
Pound pork with meat mallet as for scaloppini. Pat dry with paper towels and season lightly with salt and pepper; dust with flour, shaking off any excess.
In large heavy skillet, heat butter. Cook pork slices (in batches if necessary) 1 to 2 minutes on each side, just until cooked through. Add more butter as needed.
Transfer to serving platter and keep warm in 200F oven.
Pour off excess fat from pan. Add green onion and celery, then white wine; bring to boil, stirring up browned bits from bottom of pan.
Reduce sauce until slightly thickened. Add jelly, cream and thyme; cook until mixture is well blended and liquid becomes thick and creamy. Taste and adjust seasoning.
Pour over pork and serve immediately.
