PORK - CHOPS - PECAN SAUCE

Makes 4 servings.

8 pork chops, cut 1/2-inch thick
1/2 tsp. salt
1 T. butter
1 T. vegetable oil
3 T. sweet Sherry
1/2 c. whipping cream
pinch grated nutmeg
1/2 c. chopped pecans

Sprinkle pork chops with salt.
n a large skillet, melt butter with vegetable oil over medium-high heat.
Add 4 chops to skillet and cook until meat is no longer pink inside, about 7 minutes per side.
Remove to a platter and keep warm in the oven. Repeat with remaining chops.
Deglaze the pan with Sherry. Stir in cream and nutmeg.
Cook over high heat, stirring occasionally, until sauce is slightly thickened.
Stir in pecans. Pour sauce over chops. Serve immediately.
