CHICKEN BREASTS - PARMIGIANA REDUX

Makes 4 servings.

2 T. all-purpose flour
1 egg, well beaten
1 c. finely crushed shredded wheat cereal
4 chicken breast fillets
2 c. cherry tomatoes, cut in half
1/4 c. Balsamic vinaigrette
1/2 c. shredded Mozzarella cheese

Preheat oven to 400F.
Place flour, egg and cereal into three separate shallow dishes.
Dip chicken in flour, then in egg and cereal, turning over to evenly coat both sides of each breast.
Place in shallow baking dish.
Bake at 400F. for 20 minutes, or until chicken is cooked through.
Meanwhile, combine tomatoes, and vinaigrette in a skillet.
Bring to boil over medium heat. Reduce heat to low and simmer 10 minutes, or until liquid is reduced.
Sprinkle chicken with Mozzarella and bake an additional 3 - 5 minutes, or until cheese is melted.
Served topped with tomato mixture.
