CHICKEN CASSEROLE - SAFFRON SAUCE

Makes 6 servings.

6 chicken breast fillets
2 onions, chopped
1/2 tsp. saffron threads
1 T. hot water
3 T. clarified butter
1 1-inch cinnamon stick
4 green cardamoms, crushed
3 cloves
3 cloves garlic, crushed
1/2 T. ginger, grated
1/2 c. plain yogurt
2 tsp. cayenne
1 1/2 tsp. salt
1/2 c. ground almonds
1/2 c. ground cashews
1 T. coriander, chopped

Cut chicken into pieces. Boil onion until transparent, puree in blender.
Grind saffron with mortar & pestle and dissolve in hot water.
Heat butter and saute cinnamon, cardamoms and cloves for 1 minute.
Add onions, garlic and ginger. Continue frying until golden. Add yogurt and saffron, chicken, cayenne and salt.
Stir occasionally until each piece of chicken is golden and coated. Add ground nuts and blend well.
Cover and simmer until chicken is tender, about 15 to 20 minutes. Uncover pan and continue cooking until liquid is almost evaporated. Serve on rice.
