PUDDING - BAKED - MINUTE RICE

Makes 6 servings.

3/4 c. Minute Rice
2 3/4 c. milk
1/2 c. sugar
1/2 tsp. salt
1/2 c. raisins
2 eggs, slightly beaten
1 tsp. vanilla extract
1/4 tsp. grated nutmeg

Preheat oven to 375F.
In a medium saucepan, combine rice, milk, sugar, salt and raisins.
Bring to a boil over medium heat, stirring frequently. Stir uncovered for 10 minutes, stirring occasionally.
Mix eggs, vanilla and nutmeg in a 1 qt. baking dish. Slowly stir in hot rice mixture.
Set in a shallow pan; then pour 1 inch very hot tap water into pan.
Bake at 375F for 30 minutes, or until the edges are slightly browned.
Cool at least one hour before serving.
