PORK - CHOPS - APPLE AND SWEET POTATO

Makes 6 servings.

6 pork chops, 1-inch thick
all-purpose flour
1/4 c. bacon drippings
1 medium onion, chopped
1 c. apple juice
1 T. Worcestershire sauce
4 medium apples, peeled and cut into 1/2-inch slices
4 medium sweet potatoes, peeled and cut into 1/2-inch slices
salt and pepper

Preheat oven to 350F.
Coat pork chops with flour; brown on both sides in hot bacon drippings.
Place pork chops in a casserole just large enough to hold them in a single layer.
Add onion to skillet; saute until tender. Add apple juice and Worcestershire sauce and bring to a boil, stirring to loosen clinging particles. Remove from heat.
Arrange alternate layers of apples and sweet potatoes on top of chops, sprinkling with salt and pepper on each layer.
Pour apple juice mixture over everything, cover tightly, and bake at 350F for l 1/2 hours.
