FETTUCCINE - SCALLOPS IN WHITE WINE SAUCE

Category: Noodles in Sauce

Makes 4 servings.

2 T. butter
1 onion, minced
1 c. dry white wine
2 T. lemon juice
1 c. whipping cream
2 T. minced parsley
1 lb. sea scallops
salt and pepper
1 lb. fettuccine, cooked and hot

In a medium skillet, melt butter over medium heat; cook onion for 2 to 3 minutes.
Add wine and lemon juice; bring to a simmer and cook until it starts to thicken.
Stir in cream, parsley and scallops; season with salt and pepper to taste.
Simmer for 2 to 4 minutes, or until scallops are opaque.
Serve immediately over fettuccine.
