PORK - CHOPS - APPLE STUFFED

Makes 4 servings.

4 pocket pork chops
2 T. chopped onion
3/4 c. chopped celery
3/4 c. diced apple
2 T. butter
2 c. dry bread crumbs
salt and pepper
1/2 tsp. sage
3/4 tsp. thyme
1/2 c. beef broth

Preheat oven to 350F.
Brown onion, celery and apple in butter. Combine with the crumbs, seasonings and bouillon.
Stuff each pork chop with 1/4 of this mixture and season the outsides of the chops with additional salt and pepper.
If pocket has been made along the outer or fat edges, secure with small skewers or toothpicks.
Place in baking pan; cover and bake at 350F for 60 minutes.
Uncover and continue baking 30 minutes to brown.
