BEEF - GROUND - TEX MEX LASAGNA

Makes 6 servings.
1 1/2 lb. lean ground beef
1 pkg. taco seasoning mix
2 14-oz. can diced tomatoes with juice
12 6-inch corn tortillas
1 14-oz. can refried beans
2 c. prepared salsa
1 c. cottage cheese
1/2 c. chopped fresh cilantro
1 c. creamed cottage cheese
1 c. shredded Colby cheese

Pico de Gallo
Preheat oven to 350F. Spray a 9 x 13-inch baking dish with cooking spray.
In a large skillet over medium-high heat, brown ground beef; stir in taco seasoning and tomatoes.
Line baking dish with 4 tortillas; top with half of refried beans and spread evenly.
Spoon one third of the beef mixture, then half of the salsa, over the beans.
Sprinkle with half of the cilantro
Layer 4 more tortillas, one third of the beef, cottage cheese and remaining cilantro.
Layer remaining 4 tortillas, beans and beef; spread remaining salsa over top and sprinkle with Colby cheese.
Bake at 350F for 30 to 40 minutes, or until cheese is melted and bubbly.
Serve with sour cream and Pico de Gallo on the side.
