CHICKEN CASSEROLE - INDIAN BUTTER SAUCE

Makes 4 servings.

4 chicken breast fillets
1 onion, minced
3 T. butter
2 tsp. crushed garlic
1 tsp. grated ginger
1 tsp. chopped green chillies
3 potatoes, cubed
1/2 T. paprika
1 T. curry powder
1 c. tomato sauce
1 tsp. salt
1 c. whipping cream
1 T. coriander, chopped

Cut chicken into bite sized pieces. Fry onions in butter until transparent.
Stir in garlic, ginger, chillies, paprika and curry powder.
Add tomato sauce, salt, potato and chicken, slowly bringing to boil.
Reduce heat, simmering until potatoes are nearly done.
Add cream, stir and simmer until chicken is tender. Garnish with coriander.
Serve over hot rice.
