CHICKEN BREASTS - HERBED CHEESE SAUCE

Makes 4 servings

4 chicken breast fillets
salt and pepper
all-purpose flour
1/4 c. butter
6 oz. herbed cream cheese
1 1/4 c. whipping cream
2 T. chopped fresh parsley

Preheat oven to 200F.
Pat chicken fillets dry with paper towels.
Sprinkle with salt and pepper to taste and dust lightly with flour.
In large heavy skillet, melt butter; cook chicken breast fillets 5 to 6 minutes on each side until tender and just barely cooked through.
Remove to serving platter and keep warm in 200F oven.
Pour off excess fat from pan and return pan to heat.
Cut cheese into small pieces and add to pan with cream.
Cook over medium heat, stirring constantly, until cheese melts and sauce thickens slightly.
Taste and adjust seasoning. Pour sauce over chicken and sprinkle with parsley.
