RED CABBAGE - BRAISED WITH ONION AND APPLE

Makes 8 servings.

8 cups shredded red cabbage
1 onion, chopped
1/4 c. granulated sugar
1 T. vegetable oil
1 tsp. salt
1 tsp. lemon juice
2 tart apples, peeled and cored
1/4 c. red currant jelly

In a Dutch oven, combine cabbage, onion, sugar, oil, salt and lemon juice.
Cover and cook over medium heat for 10 to 15 minutes, or until cabbage is crisp-tender, stirring occasionally.
Stir in apples; cook and additional 10 to 15 minutes, or until cabbage and apples are tender.
Stir in jelly until melted.
