CHICKEN CASSEROLE - STUFF N MUCH

Makes 6 servings.

4 c. cooked chicken, cubed
2 T. all-purpose flour
1/2 c. chicken broth
1/2 c. milk
salt and pepper

Stuffing

2 stalks celery, chopped
1 onion, minced
1 T. butter
1 tsp. sage
1/2 tsp. poultry seasoning
salt and pepper
2 c. unseasoned stuffing cubes, crushed
2 c. coarsely crumbled corn bread
1/2 c. chicken broth
1 egg, beaten

Gravy

1/4 c. butter
6 T. all-purpose flour
2 c. chicken broth
1/2 c. milk

Preheat oven to 350F.
Spray a 2-quart baking dish with cooking spray.
Place chicken in baking dish; set aside.
In a small saucepan, combine flour, broth and milk until smooth.
Bring to a boil; cook and stir for 2 minutes. Season with salt and pepper. Spoon over chicken.
In a large skillet, saute celery and onion in butter until tender. Stir in seasonings.
Remove from the heat; add stuffing cubes, corn bread, broth and egg. Mix well. Spoon over chicken mixture.
Cover and bake at 350F for 35 to 40 minutes, or golden brown.
Prepare Gravy. Melt butter in a small saucepan. Stir in flour until smooth; gradually add broth and milk.
Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken and dressing.
