LINGUINE - SHRIMP, GARLIC AND CAPERS

Makes 6 servings.

1/4 c. butter
1/4 c. olive oil
8 cloves garlic, minced
1 lb. shrimp, peeled and deveined
1/2 c. chicken stock
2 T. lemon juice
1 tsp. red pepper flakes
1/4 c. capers
1/4 c. dry white wine
1 lb. linguine, cooked and hot
3 T. chopped fresh parsley
salt and pepper

Heat butter and oil in a skillet over medium heat, mix in garlic; cook and stir until golden.
Stir in shrimp, chicken stock and lemon juice; cook for 5 minutes.
Add red pepper flakes and capers; continue to cook, stirring , until shrimp are opaque,
Spoon shrimp over linguine; cover to keep warm.
Deglaze skillet with white wine, cooking until pan juices are reduced by half.
Pour over shrimp and pasta; add parsley and season with salt and pepper to taste.
Toss well to mix shrimp and coat pasta with sauce.
