SWEET POTATOES - SWEET N SPICY

Makes 8 servings.

3 1/2 lb. sweet potatoes, peeled and sliced
1 c. sliced shallots
1/2 tsp. chili powder
1/2 tsp. smoked paprika
1 c. chicken broth
1/4 c. maple syrup
3 T. chopped pecans
2 T. chilled butter, cubed

Preheat oven to 375F.
Spray a 9 x 13-inch baking dish with cooking spray.
Combine sweet potatoes, shallots, chili powder, smoked paprika, and salt and pepper to taste.
Place in dish. Pour broth and maple syrup over potatoes.
Sprinkle pecans evenly over top and dot with butter.
Cover with foil and bake at 375F for 20 minutes.
Remove foil and continue to bake until potatoes are tender, about 10 minutes.
