SWEET POTATOES - FETA GARLIC ROSTI

Makes 4 servings.

1 lb. sweet potatoes
2 T. olive oil
1 onion, minced
1 clove garlic, minced
6 oz. Feta cheese, crumbled
2 eggs, beaten

Preheat an oven to 425F.
Peel and grate sweet potatoes; place in a clean cloth and squeeze out the excess liquid; transfer to a large bowl.
Heat olive oil in a skillet over medium heat; cook onion and garlic in the hot oil until soft.
Add to sweet potato; stir in 2/3 of the Feta cheese and mix well.
Divide mixture into 4 even portions and shape into balls; flatten to 1/2-inch thickness; place on baking sheet.
Roast at 425F for 25 minutes, or until golden brown.
Sprinkle remaining Feta cheese over the patties and return to oven to melt the cheese, about 5 minutes more.
