SWEET POTATOES - CHEDDAR BAKED

Makes 6 to 8 servings.

6 slices white bread, torn into large pieces
2 T. butter, melted
2 1/2 c. shredded old Cheddar cheese
8 slices bacon, chopped
1 onion, chopped fine
4 cloves garlic, minced
1/2 tsp. cayenne pepper
5 lb. sweet potatoes, peeled, halved lengthwise, and sliced thin
3/4 c. heavy cream
3/4 c. buttermilk
2 1/2 tsp. salt
5 green onions, sliced thin

Preheat oven to 425F.
Pulse bread, butter and 1/2 cup cheese in blender or food processor until coarsely ground. Set aside.
Cook bacon in Dutch oven over medium heat until crisp. Transfer bacon to paper towel-lined plate and pour off all but 1 tablespoon fat.
Cook onion until softened. Add garlic and cayenne and cook until fragrant.
Stir in sweet potatoes, cream, buttermilk, and salt.
Reduce heat to medium-low and cook, covered, until potatoes are just tender, about 30 minutes. Remove from stove; stir in remaining cheese, cooked bacon, and half the green onions.
Transfer mixture to 9 x 13-inch baking dish and top with bread crumb mixture.
Bake at 425F until crumbs are golden brown, about 15 minutes. Cool 10 minutes, then sprinkle with remaining green onions.
