FETTUCCINE - SALMON AND CAPERS

Category: Noodles in Sauce

Makes 4 servings.

2 T. butter
2 scallions, thinly sliced
3/4 lb fresh asparagus, washed and trimmed
2 7-oz. cans salmon, drained and flaked
1 T. capers, finely chopped
1 cup whipping cream
black pepper
1 lb. fettuccine, cooked and hot

Melt butter in skillet. Add scallions and asparagus; cover, and cook for 5 minutes.
Stir in salmon, capers and cream; season with pepper to taste.
Cook, uncovered, for 5 minutes, stirring occasionally.
Add fettuccine and toss to coat.
