POTATOES - QUICK AU GRATIN

Makes 6 servings.
2 lb. frozen hash browns
2 c. sour cream
2 14-oz. cans cream of mushroom soup
1/2 c. butter, melted
salt
3 c. shredded Old Cheddar cheese
1/2 c. grated onion
grated Parmesan cheese
Preheat oven to 325F.
In large bowl mix hash browns and onions. Stir in sour cream, soup, melted butter, couple dashes of salt, 1 1/2 cups Cheddar cheese and several dashes of Parmesan
Spoon into a large glass casserole dish and top with remaining cheddar cheese.
Sprinkle a generous coating of Parmesan cheese.
Bake at 325F for 1 to 1 1/2 hours, or until bubbling. Broil for about 3 to 5 minutes to crisp the top.
This can be prepared in advance and frozen. Thaw for an hour, then put in the oven for about 1 1/2 hours at 325F.
