Makes 4 to 6 servings.

3 T. unsalted butter
2 cloves garlic, chopped
1 onion, diced
1 carrot, diced
1 stalk celery, diced
1 zucchini, diced
1 red pepper, diced
1 green pepper, diced
1/2 c. chicken stock
2 tomatoes, peeled, seeded and diced
1 lb. fettuccine, cooked and hot
3 T. unsalted butter
1/2 c. grated Parmesan cheese
salt and pepper

In large skillet, heat 3 tablespoons butter; saute garlic and onion until fragrant.
Add carrot, celery, zucchini and red and green pepper; stir-fry until vegetables are tender but not brown, about 10 minutes.
Add stock and tomatoes; bring to boil and cook gently, partially covered, while noodles cook.
Place noodles in pasta bowl or on platter.
Add sauce, 3 tablespoons butter and cheese; toss well.
Season with salt and pepper to taste.
