CHICKEN STEW - APRICOT RICE

Category: Chicken Casseroles

Makes 6 servings.

1 1/4 c. dried apricots
3/4 c. wild rice
3 lb. chicken breast fillets, cubed
1 onion, chopped
2 stalks celery, chopped
3 c. chicken broth
1/2 c. dry white wine
3 T. all-purpose flour
3 cloves garlic, minced
2 tsp. Italian seasoning
1 tsp. black pepper
2 T. chopped fresh parsley

Cut 1 cup apricots into quarters.
Place in slow cooker along with rice, chicken, onion and celery.
Whisk together broth, wine, flour, garlic, Italian seasoning and pepper.
Add to slow cooker.
Cover and cook on low for 5 hours or until chicken and rice are fully cooked.
Slice remaining apricots into strips.
Serve garnished with parsley and sliced apricots.
