BEEF - SHORT RIBS - OVEN BARBECUED

Makes 6 servings.

5 lb. lean beef short ribs, cut into 3 to 4-inch pieces
salt and pepper
2 T. vegetable oil
2 onions, thickly sliced into rings
2 carrots, sliced
4 cloves garlic, coarsely chopped
2 c. tomato sauce
1 c. commercial barbecue sauce
1 c. beef broth

Preheat an oven to 325F.
Season ribs with salt and pepper.
Heat the oil in a heavy large pot over medium-high heat.
Add ribs and brown evenly on all sides, about 5 minutes.
Transfer ribs to paper towels to drain briefly.
Add onions to the same pot and saute over medium-high heat about 5 minutes, or until browned,. Add carrot and saute about 5 minutes longer until crisp-tender.
Add garlic and saute for 1 minute; stir in tomato sauce, barbecue sauce and beef broth.
Reduce heat to medium-low and simmer for 1 minute to blend the flavors.
Add ribs to the sauce.
Bake at 325F for 2 1/2 hours, or until the meat is very tender, turning ribs occasionally.
Season to taste with salt and pepper. Place on warm plates and serve immediately.
