POTATOES - GOLDEN CHEDDAR BAKE

Makes 8 to 10 servings.

8 medium potatoes, peeled and cubed
1 8-oz. pkg. cream cheese, cubed
2 eggs
2 T. all-purpose flour
1 c. shredded Old Cheddar cheese
2 T. minced fresh parsley
2 T. minced chives
salt and pepper
1 3-oz. can french-fried onions

Preheat oven to 350F.
Spray a 3-quart baking dish with cooking spray.
Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat.
Cook for 20 to 25 minutes, or until very tender; drain well.
In a mixing bowl, beat potatoes and cream cheese until smooth.
Add eggs, flour, cheddar cheese, parsley and chives; season to taste with salt and pepper; mix well.
Transfer to a baking dish. Bake, uncovered, at 350F for 45 minutes.
Sprinkle with onions; bake an additional 5 to 10 minutes, or until golden brown.
