CHICKEN BREASTS - CHILI SAUCE

Makes 6 servings.
1 1/2 c. crushed potato chips
2 tsp. chili powder
1/2 tsp. salt
6 chicken breast fillets
1/2 c. evaporated milk
Chili Sauce
1 T. vegetable oil
1 onion, chopped
1/2 green pepper, chopped
1 19-oz. can diced tomatoes
1 tsp. granulated sugar
1 tsp. chili powder
1/2 tsp. salt
Tabasco sauce
1/2 c. sliced stuffed olives
Preheat oven to 350F.
Line a 9 x 13-inch baking pan with aluminum foil.
Combine potato chips, chili powder and salt in a flat dish.
Dip chicken pieces in evaporated milk, then roll in potato chip mixture to coat all sides.
Place in prepared baking dish, skin side up.
Bake at 350F for 1 hour, or until the chicken is very tender.
Prepare Chili Sauce while chicken is baking.
Heat vegetable oil in saucepan.
Add onion and green pepper to oil and saute 3 minutes, stirring.
Add remaining ingredients and simmer uncovered for 30 minutes, stirring occasionally.
Serve as an accompaniment to the chicken.
