CHICKEN BREASTS - BLACKENED CAJUN STYLE

Makes 4 servings.

4 chicken breast fillets
cooking spray
2 T. Cajun Blackening Rub

Heat cast-iron skillet over high heat for 5 minutes until it is smoking hot.
Spray chicken fillets with cooking spray on both sides; coat evenly with the Cajun Blackening Rub.
Place chicken in hot skillet and cook for 5 minutes; turn and cook an additional 5 minutes on other side.
Transfer chicken to platter; cover and let rest 10 minutes before serving.
