Makes 6 servings.
1/2 c. olive oil
2 garlic cloves, crushed
2 large onion, chopped
1 green pepper, chopped
1 28-oz. can diced tomatoes
1 7-oz. can tomato sauce
2 c. dry white wine
1/2 c. chopped parsley
1/2 tsp. dried oregano
1/2 tsp. dried basil
1 tsp. salt
pinch black pepper
pinch granulated sugar
1/2 c. water
1 1/2 lb. halibut
1 lb. raw prawns (in shell)
1/2 lb. crab legs
16 clams (in shell)
In Dutch oven, heat olive oil.
Sauté garlic, onion and green pepper until tender, about 10 minutes, stirring occasionally.
Add tomatoes and juice, tomato sauce, wine, parsley, oregano, basil, salt, pepper, sugar and water, mixing well. Bring to a boil and simmer, uncovered, for 25 minutes, stirring occasionally.
Cut halibut into 1-inch pieces; discard bones and skin.
Break crab legs into segments. Add to stock with prawns and clams.
Simmer, covered, 10 minutes. Uncover and simmer 15 minutes longer, or until clams open.
Correct seasonings to taste and sprinkle with additional parsley.
