CARROTS - ROASTED - ORANGE GLAZED

Makes 6 servings.

1 1/2 lb. baby carrots
1 onion, thinly sliced
1/4 c. orange juice
6 T. brown sugar
4 T. butter
1/4 tsp. salt

Preheat oven to 325F.
Parboil carrots in water for 5 minutes. Remove from heat and drain.
Place carrots in a shallow baking dish.
Add sliced onion; mix well
Combine orange juice, brown sugar, butter, and salt.
Pour over carrots and onions.
Bake at 325F for 30 minutes, or until carrots are tender and sugar and orange juice has caramelized.
