SEAFOOD - SCALLOPS - FLORENTINE

Makes 4 to 6 servings.
1 lb. sea scallops
3 T. butter
2 T. all-purpose flour
1 c. whipping cream
1/4 c. grated Parmesan cheese
salt and pepper
1 10-oz. pkg. frozen chopped spinach, thawed
Topping
1 c. shredded mozzarella cheese
1/4 c. grated Parmesan cheese
1/4 c. plain bread crumbs
1 T. Old Bay Seasoning
Preheat oven to 350F. Spray a shallow 8-inch round baking dish with cooking spray.
Bring a pot of water to a rolling boil.
Rinse scallops and drop into boiling water; cook for 2 minutes.
Remove scallops with a slotted spoon and pat dry; transfer to baking dish.
In a small saucepan, melt butter; stir in flour and cook over low heat for 3 minutes.
Whisk in cream and 1/4 cup Parmesan cheese; season with salt and pepper to taste.
Cook for an additional 2 to 3 minutes, stirring constantly, until thick.
Squeeze spinach dry, and spread over scallops.
Pour cream sauce over spinach and top with mozzarella cheese, 1/4 cup Parmesan cheese and bread crumbs; sprinkle Old Bay Seasoning over top.
Bake at 350F for 15 minutes, or until browned and bubbly.
