WINGS - BUFFALO SAUCE

Makes 6 to 8 servings.

oil for deep frying
1/2 tsp. garlic powder
1 c. all-purpose flour
1/2 tsp. onion powder
1/2 tsp. paprika
1/2 tsp. cayenne pepper
1 tsp. seasoned salt
3 lb. chicken wings

Pepper Sauce
1/4 c. butter
1/2 c. hot sauce
1/2 tsp. black pepper
1/2 tsp. garlic powder

In a small bowl mix together flour, 1/2 teaspoon garlic powder, onion powder paprika, cayenne pepper and seasoned salt.
Dredge chicken wings with flour mixture until evenly coated.
Transfer to a baking dish, cover and refrigerate for 60 to 90 minutes.
Meanwhile, prepare Sauce. Combine butter, hot sauce, pepper and 1/2 teaspoon garlic powder in a small saucepan over low heat.
Stir together and heat until butter is melted and mixture is well blended.
Remove from heat and set aside.
When ready to cook wings, heat oil in a deep fry pan to 375F; the oil should be deep enough to cover wings entirely, an inch or so deep.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Transfer to paper towels to drain.
To serve, place wings in serving bowl; add hot sauce mixture and toss well.
Serve with Blue Cheese Salad Dressing and raw vegetables on the side.
