SMOKIES - BACON AND BROWN SUGAR

Category: Heated Appetizers

Makes 8 to 12 servings.

2 lb. finger-sized smokie sausages
2 lb. bacon slices
2 c. brown sugar, packed

Tiger Tiger Dipping Sauce
3/4 c. sour cream
1/4 c. mayonnaise
3 tsp. prepared horseradish
1 tsp. granulated sugar
1/4 tsp. dill

Preheat oven to 350F. Fit a baking sheet with a wire rack to keep the sausages above the baking sheet.
Cut bacon slices into thirds; dredge with brown sugar and wrap each around a little sausage.
Place the wrapped sausages on wooden toothpicks.
Coat sausages liberally with brown sugar and arrange on wire rack.
Bake at 350F for 45 minutes, turning after 20 minutes, until bacon is crisp and the brown sugar melted.
Turn on broiler and cook for an additional 5 to 10 minutes to finish off.
Meanwhile prepare Tiger Tiger Dipping Sauce. In a small bowl, combine sour cream, mayonnaise, horseradish, sugar and dill; stir until well blended. Set aside.
Turn on broiler and cook sausages for an additional 5 minutes to finish off.
Serve with sauce.
