SKEWERS - BEEF SATAY

Makes 18 servings.

3 lb. sirloin or flank steak

Marinade
1/4 cup soy sauce
1/4 cup rice wine vinegar
1/4 cup freshly grated ginger
3 cloves garlic
1/2 cup chopped cilantro
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon Dijon mustard
1 cup peanut oil

Peanut Sauce
1 1/2 cups creamy peanut butter
3/4 cup soy sauce
1/2 cup chopped cilantro
2 tablespoons freshly grated ginger
2 cloves garlic, minced
1 tablespoon sesame oil
3/4 cup peanut oil
1/2 cup rice wine vinegar

Cut steak against the grain into 1/4 inch slices; thread slices on to bamboo skewers. Transfer to a 9 x 13-inch baking dish; cover and set aside.
Prepare Marinade. In a blender or food processor, combine soy sauce rice wine vinegar, ginger, garlic, cilantro, salt, pepper, mustard; process until smooth.
While processing, drizzle peanut oil into mixture, in a slow steady stream, until all oil is incorporated.
Pour marinade over beef skewers and toss to coat. Cover and refrigerate for 2 to 4 hours.
Meanwhile, prepare Peanut Sauce. Combine peanut butter, soy sauce, cilantro, ginger, garlic sesame and peanut oils and rice wine vinegar in blender or food processor; process until smooth. Pour into serving dish; set aside.
When ready to cook beef, preheat broiler in oven, or counter top grill, to high heat.
Remove skewers from marinade and arrange on broiling rack.
Broil under high heat, or cook on hot grill, for 5 to 10 minutes; turn once while cooking.
Serve warm with Peanut Sauce for dipping.
