SCALLOPS - BACON AND BOURBON

Category: Heated Appetizers

Makes 36 servings.

1/4 c. bourbon
4 green onions, minced
1/4 c. maple syrup
2 T. soy sauce
2 T. Dijon mustard
1/2 tsp. pepper
36 large scallops
12 slices bacon

In a medium bowl, combine bourbon, green onions, maple syrup, soy sauce and mustard; stir well.
Toss in scallops; cover and marinate in refrigerator for 1 hour, stirring occasionally.
Meanwhile, heat a large skillet over medium heat.
Cut each slice of bacon into 3 pieces and fry in skillet until partially cooked; bacon should still be limp and flexible.
Transfer to paper towel to drain.
Remove scallops and reserve marinade; wrap 1 piece bacon around each scallop.
Preheat broiler. Spray broiling pan with cooking spray.
Secure with a toothpick and place on broiler pan.
Broil 8 to 10 minutes, or until bacon is crisp and scallops are done.
Baste occasionally with reserved marinade while broiling.
