PASTRY - LOBSTER PUFFS

Category: Chilled Appetizers

Makes 30 servings.

6 c. chopped cooked lobster meat
1 c. minced celery
1/4 c. minced red bell pepper
1 1/2 c. mayonnaise
2 T. fresh lemon juice
1 dash hot pepper sauce
30 Profiteroles

In a large bowl, combine lobster meat, celery, red pepper.
Add mayonnaise and lemon juice; season with red pepper sauce to taste
Cover and chill until serving time (can be prepared one day in advance).
Cut tops off profiteroles and fill each with lobster mixture; replace tops.
Chill before serving.
