CANAPES - SPINACH AND CHEESE PINWHEELS

Makes 18 servings.
1 8-oz. sheet frozen puff pastry
1 egg
1 T. water
1/2 c. shredded Muenster or Monterey Jack cheese
1/4 c. grated Parmesan cheese
1 green onion, chopped
1/8 tsp. garlic powder
1 10-oz. pkg. frozen chopped spinach, thawed and well drained
Thaw the pastry sheet at room temperature for 40 minutes, or until it's easy to handle.
Preheat oven to 400F.
Line 2 baking sheets with parchment paper.
Beat egg and water in a small bowl with a fork.
Combine Muenster cheese, Parmesan cheese, onion and garlic powder in a medium bowl.
Unfold pastry sheet on a lightly floured surface. Brush with egg mixture.
Top with cheese mixture and spinach.
Starting at a short side, roll up jelly-roll fashion.
Cut into 18 slices. Place slices cut-side down on the baking sheets. Brush with the egg mixture.
Bake at 400F for 15 minutes, or until golden. Serve warm or at room temperature.
*Make sure to remove as much liquid as possible from the spinach before adding it to the pastry. If it's too wet, it will make the pastry soggy.
