QUICHE - SPINACH, SAUSAGE AND FETA

Makes 6 servings.

1 (9 inch) unbaked pie crust
1/2 c. finely crushed garlic and butter croutons
1 c. shredded Old Cheddar cheese
4 oz. smoked turkey sausage, sliced
1 9-oz. frozen spinach, thawed, squeezed to drain and chopped
2 T. finely chopped onion
1 c. crumbled feta cheese
4 eggs
1 1/2 c. light cream
salt and pepper
8 cherry tomatoes, cut into quarters

Preheat oven to 350F.
Cover bottom of pie crust with crushed croutons; sprinkle with Cheddar cheese.
Layer sausage slices on cheese; top with spinach, onion and feta cheese.
In large bowl, beat eggs and cream with wire whisk until well blended; season with salt and pepper.
Slowly pour into pie crust.
Bake at 350F for 45 minutes; cover crust edge with strips of foil.
Bake 5 to 15 minutes longer or until knife inserted in center comes out clean.
Let stand 15 minutes before serving. Garnish with tomatoes.
